Jersey Fresh Zucchini "Pizzas"

2-3 TB Olive Oil
1 clove garlic, diced
1/2 tsp Italian seasoning, plus more for toppings
1 extra large Jersey Fresh zucchini, cut into 1/2 inch thick rounds
1 (14oz) can of Jersey Fresh pizza sauce (we used Don Pepino) OR 2 cups of homemade sauce
1-2 cups grated mozzarella
Pizza toppings of your choice (we used 1/4 cup pepperoni slices cut into 1/4s & 1/4 cup black olives, sliced)
1/4 cup Jersey Fresh basil, diced




  1. Preheat oven to 350 degrees

  2. Mix oil, garlic and Italian seasoning in a small dish

  3. Place zucchini rounds onto a foil lined baking sheet

  4. Brush oil mixture onto zucchini rounds/"crusts." Bake for 25 minutes

  5. Top each zucchini "crust" with pizza sauce, cheese and toppings of your choice

  6. Return cookie sheet to oven and cook until cheese has melted, about 5 minutes

  7. Sprinkle with basil (if desired) and serve
