Equal parts of Zucchini, Yellow Squash, Carrots, and Sweet Red Peppers
Extra Virgin Olive Oil
Salt and pepper




Cut zucchini and squash into 3/8" x 3/8" x 3-5" slices, leaving skin on and discarding inside pulp and seeds Peel and cut carrots into 1/4" x 1/4" x 3-5" slices (since carrots take longer to cook they must be cut thin) Cut peppers in 3/8" strips. Combine vegetables in large bowl with room to allow mixing. Add olive oil to thoroughly coat all vegetables. Cut pinch of salt and pepper Mix thoroughly and refrigerate for 1 hour Cook over low to medium temp grill basket until carrots are soft and slightly charred. (Simple grill solution if you don't have a basket, most home improvement stores carry expanded metal grating. Be sure to clean with soap and water, and simple lay over your grill grates).
