Jersey Fresh Baked Hashbrowns

4 Jersey Fresh potatoes
1/2 cup butter, melted
1 cup cheddar cheese, shredded
2 eggs, whisped
1/4 cup chives, chopped
1 TB garlic salt
1 tsp oregano
1/2 tsp pepper




  1. Preheat oven to 400 degrees

  2. Peel and grate Jersey Fresh potatoes

  3. Soak grated potatoes in a bowl of ice water

  4. Drain and dry grated potatoes and transfer to a bowl

  5. Add butter, cheese, eggs, chives, garlic salt, oregano and pepper. Mix

  6. Take a handful of mixture and shape it into hashbrown shape on baking sheet, repeat with remainder of mixture

  7. Bake for 40-45 minutes (flipping when 15 minutes left) until brown and crispy

  8. Serve warm with ketchup or favorite dipping sauce
