Jersey Fresh Corn and Rice Salad

1 cup long-grain white rice
1/4 cut fresh lemon juice
1/4 cup vegetable oil
1 cup hulled Jersey Fresh sweet corn
1 diced Jersey Fresh green bell pepper
1 diced Jersey fresh red bell pepper
1 cut cooked black beans, rinsed
1/4 cup thinly sliced Jersey Fresh green onions
1/4 cup chopped Jersey Fresh cilantro



Cook rice until just tender, 12-15 mins. Drain and rinse in cold water. Whisk lemon juice and 3 tablespoons oil in small bowl. Season dressing to taste with salt and pepper. heat oil in a large nonstick skillet over medium heat. Add corn, black beans and bell peppers. Sprinkle with salt and pepper. Saute' until vegetables are just tender, 5-7 mins.; scrape into large bowl. Add rice, green onions, cilantro and dressing; toss to coat. Season with salt and pepper. Serve chilled.
